My grandmother made this cobbler using just about any fruit grown in her garden or given to her by relatives and friends! Many luscious varieties of peaches, plums and apricots are all part of my childhood memories.
Nana’s Fruit Cobbler
Preheat oven to 400 degrees.
Topping
Mix all of the following ingredients into a thin batter and set aside.
- 1 cup flour
- 1 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
Filling
Grease a 13″ x 9″ baking pan. Line pan with prepared ripe peaches (see below) or any other ripe fresh fruit available. Stone fruits work best. Make a mixture of the following ingredients and pour over fruit in pan:
- 1 1/2 cup water
- 1/4 lb. (1 stick) melted butter
- 1 cup sugar
Pour topping batter on top of filling. Bake at 400 degrees for 20 minutes, then turn oven down to 350 degrees and bake for an additional 45 minutes. Serve warm or at room temperature with whipped cream or drizzled with heavy cream if desired.
Preparing Peaches
Put whole peaches in a pan in the sink. Pour boiling water over them. After the peaches have set for a few minutes, peel and cut and they are ready to use in recipes.
